Gnocchi with pesto and greens

Serves 4

 

Ingredients
500g gnocchi
2 tbsp pesto
1 cup baby spinach
1⁄2 cup frozen peas
1 tbsp parmesan

 

Method
1. Bring a large pan of water to the boil. Add the gnocchi and cook for 3 minutes or
according to packet instructions
2. Once cooked, drain the gnocchi and stir in the pesto, spinach and peas until the peas
defrost.
3. Divide into bowls and top with the parmesan.
